FARFUR

Serves 6, Preparation Time: 1 hour, Cooking Time: 10 minutes

Preparation:

  • Sift the flour into a mixing bowl. Add salt and mix.

  • Create a well in the center of the flour and add the eggs. Knead until you get a smooth dough.

  • Roll the dough out on a floured surface into a thin sheet and cut into small squares.

  • Dry the squares in a windy area on a clean sheet. Once thoroughly dried, transfer to jars or a cloth bag.

  • Heat a teaspoon of margarine in a pot. Toast the dough squares.

  • In a separate pot, sauté grated tomatoes and add enough meat or chicken broth to cover the farfur.

  • Add the toasted farfur squares to the boiling sauce. Cook for 1-2 minutes and let it steep.

  • Divide into serving plates and serve hot.

  • 200 grams of flour

  • 2 eggs

  • 1 teaspoon of margarine

  • Salt
