EGGPLANT MINCED MEAT PASTRY
Serves 6, Preparation Time: 1 hour, Cooking Time: 45 minutes

Preparation:
Wash and dry the eggplants. Make holes in several places with a skewer and grill them until charred. Peel them and mash them into a puree.
Cook the minced meat with about 1 small coffee cup of water. Mix it with the roasted and mashed eggplant.
Season with salt and black pepper.
Knead sifted flour, water, vegetable oil, and baking powder in a bowl.
Divide the dough into two equal parts and spread the first part onto a greased baking tray.
Spread the eggplant meat mixture and also spread the remaining dough in the same way on top. Cut into slices of desired size.
Brush with egg yolk.
Bake in a preheated oven at 170 degrees for 45 minutes. Serve.
Tip: Adding the broth from the boiled ground meat while preparing the dough will give it a better flavor.
