EGGPLANT MINCED MEAT PASTRY

Serves 6, Preparation Time: 1 hour, Cooking Time: 45 minutes

Preparation:

  • Wash and dry the eggplants. Make holes in several places with a skewer and grill them until charred. Peel them and mash them into a puree.

  • Cook the minced meat with about 1 small coffee cup of water. Mix it with the roasted and mashed eggplant.

  • Season with salt and black pepper.

  • Knead sifted flour, water, vegetable oil, and baking powder in a bowl.

  • Divide the dough into two equal parts and spread the first part onto a greased baking tray.

  • Spread the eggplant meat mixture and also spread the remaining dough in the same way on top. Cut into slices of desired size.

  • Brush with egg yolk.

  • Bake in a preheated oven at 170 degrees for 45 minutes. Serve.

Tip: Adding the broth from the boiled ground meat while preparing the dough will give it a better flavor.

  • 500 grams minced meat

  • 6 cups of flour

  • 1 cup of water

  • 1 teaspoon baking powder

  • Salt

  • 2 cups of vegetable oil

  • 1 egg yolk
